AVOCADO ON TOAST


Endless possibilities..sauces, creams, smoothies, chocolate mousse and ice creams..Avocado is multifunctional. But the best way to prep it for me, will always be smashed on toast.


Add a few herbs et’voilà, your avocado came to life #idontlikeitplain.


Oh, and visit your local health store and buy a package of nutrition yeast.

It has a ‘cheesy’ and salty bite. Great for extra flavour. Enjoy your meal!

Ingredients:

  • 2 slices of toasted (gluten free) bread

  • 1 ripe avocado

  • 1 garlic clove, finely chopped

  • 1/2 lime or lemon, juice only

  • pinch of dried chilli flakes

  • 1-2 tsp sambal (optional)

  • 1-2 tbsp nutritional yeast (optional

  • salt and pepper to taste

  • few sprigs of fresh coriander or basil, finely chopped

  • 150 g (1 cup) cherry tomatoes, rinsed off

Serves: 1 person Extra needed: bowl


Directions:

Preheat the oven to 180℃/350℉.

Place the tomatoes in a small oven dish and put in the oven for about 15-20 minutes, until they are softened and starting to split.


Meanwhile, mash the avocado and add the garlic clove, lime juice, chili flakes and nutritional yeast. Spread the bread with the smashed avocado. Take the tomatoes from the oven and place on the bread. Add the fresh herbs.


Do you like spicy? Then add some sambal. Eet smakelijk!
